
Rump Steak and Kidney Pie
Serves 5-6 1½ hours cooking time
1½ pounds rump steak
1 pound beef kidney
1 tablespoon plain flour
¼ teaspoon white pepper
¼ teaspoon salt
1/8 teaspoon nutmeg
plain pie pastry
stock or water
Split kidneys and remove core, skin and hard matter, then cut into 2-inch pieces and cover with salt water for 1 hour. Drain and wipe steak with cold cloth and cut into 2-inch pieces. Sprinkle kidney and steak with flour, salt, pepper nutmeg and a little stock. Line the sides of a baking dish with pastry and fill with steak and kidneys. Cook for 1½ hours.
