Curried Beans and Rice

Serves 4

3 Cups Cooked Rice (Brown Rice is the absolute best, but White Rice will work fine)
1 Tin of Black Beans, rinsed and drained
1 Tin Chopped Tomatoes with juice
3 Tbl Curry Powder (or to taste)
1 Bunch Scallions, chopped both white part and green part
1 Bell Pepper (Red or Green), diced

 

Combine all together in a bowl and serve. Goes good with fresh Tortillas or Roti (Indian Wholewheat Flatbread).

If you want you can substitute about ! Cup odf your favoriite salsa for the Tomatoes and Curry Powder
